{salsa and guacamole!}

Last night, I went to a potluck so naturally I needed to make salsa. What is a party without salsa? Nothing, that's what. And since salsa goes with guacamole, I decided to do that too. So here are some awesome recipes that you should all try out for your next party :)

Salsa Fresca
2 large fresh ripe tomatoes, chopped
1/2 large white onion, peeled and minced
1/4 teaspoon minced raw garlic, or to taste
1 habanero or jalapeƱo pepper, stemmed, seeded and minced, or to taste
1/4 cup chopped cilantro leaves
1 tablespoon fresh lime juice or 1 teaspoon red-wine vinegar
Salt and freshly ground pepper.

1. Combine all ingredients, taste and adjust seasoning as necessary.
2. Let the flavors marry for 15 minutes or so before serving, but serve within a couple of hours.

Guacamole

4 ripe organic avocados

1 medium organic Vidalia or sweet
yellow onion, finely chopped
1 medium organic roma or beefsteak
tomato
1 large organic lime
2 small organic jalapeno peppers, finely chopped (seeds removed)
2 cloves organic garlic, finely minced
organic sea salt to taste
organic ground white pepper to taste
1 large bunch fresh organic cilantro, finely chopped (stems removed)

Cut all 4 avocados into halves. Remove pits. With a sharp knife, score each half
length- and crosswise to form cubes. Scrape out each avocado half into large
mixing bowl. Roll lime on counter top to allow juice to surface. Cut lime in half and
squeeze juice over avocados -- careful not to drop any seeds into your bowl. Add
onion, tomato, jalapeno, garlic and cilantro into bowl. Mix vigorously with wooden
spoon. Add salt and pepper to taste. If you prefer a more whipped guacamole, try
using a hand mixer to whip some of the avocados before adding all of the other
ingredients. Scoop with chips and enjoy!

  3. Loooove salsa and guacamole. And kudos on adding cilantro to the guac. So many people hate the taste of cilantro, but I love it and could eat it for days!
